<Job Overview> Seeking an artisan Sushi Chef to lead our intimate, omakase counter. In this role, you are both a culinary master and a host. You will be responsible for curating, preparing, and presenting a premium, multi-course tasting menu directly to guests. The ideal candidate possesses elite knife skills, a deep reverence for traditional and modern Japanese culinary techniques, and the charismatic personality required to deliver an unforgettable, interactive dining experience.
<Responsibilities> Customer Service & Counter Service ・Provide omakase courses ・Explain the origin, preparation methods, and flavor profiles of sushi ingredients ・Communicate with customers ・Maintain a clean counter and an organized, visually appealing work environment Food Preparation & Menu Development ・Prepare premium ingredients such as bluefin tuna, sea urchin, and white fish, including whole fish breakdown ・Perform traditional techniques such as shime and kombu-jime ・Cook sushi rice, manage its temperature, and maintain consistent quality ・Develop seasonal omakase menus using fresh, seasonal ingredients Store Operations & Sanitation Management ・Inspect the quality of fresh seafood ・Manage food inventory and minimize waste ・Ensure strict compliance with sanitation standards, including proper storage and temperature control of raw fish ・Maintain sanitation of knives and workstations
<Requirements> ・Minimum of 5 years of experience ・Bilingual in Japanese and English ・Authorized to work in the United States ・Strong sushi-making skills and extensive knowledge of fish ・Enjoy interacting with customers ・Experience providing omakase-style service is preferred ・Able to propose new menu items while respecting traditional Japanese culinary techniques
