Léon 1909 is a countryside French & Italian fine-dining restaurant located on beautiful Shelter Island in the Hamptons. Our kitchen focuses on wood-fired cooking, working closely with local farms and fishermen to create thoughtful, seasonal cuisine.

The Opportunity
We are seeking an experienced full-time Sous Chef to join our culinary team for the May 1 through Labor Day season.
This role is ideal for a chef who loves food, respects creativity, leads with empathy, and understands the discipline required in a fine-dining environment. The right candidate brings strong leadership instincts, maintains composure under pressure, and is motivated to grow.

What You’ll Do
As Sous Chef, you will support the Executive Chef and help lead the kitchen by example. Responsibilities include:
Executing and overseeing daily prep and service in a fine-dining environment
Supporting wood-fire cooking and seasonal menu execution
Upholding food quality, consistency, and cleanliness standards
Managing ordering, receiving, and inventory
Assisting with food cost control and P&L goals
Training, motivating, and supervising kitchen staff
Supporting staff scheduling and payroll oversight
Ensuring food safety and sanitation compliance
Leading a team of approximately 5–10 kitchen employees
What We’re Looking For
Experience & Skills
3+ years of line cook experience in a high-volume upscale casual or fine-dining restaurant
2+ years of kitchen leadership or management experience
Experience with inventory, ordering, and receiving
Strong understanding of food costs and profitability
Staff training, motivation, and scheduling experience
Food safety knowledge (certification preferred)
