We are seeking a skilled, detail-oriented Sushi Roller to support our sushi station. This role focuses on fish preparation, basic sushi execution, and maintaining the highest standards of freshness, cleanliness, and organization.
Slice sashimi and perform sushi-grade fish cuts
Conduct basic fish butchering and trimming
Handle, store, and manage fish to ensure optimal freshness
Prepare station mise en place, including vegetables and other prep items
Execute inventory counts and assist with inventory management
Roll basic maki rolls accurately and consistently
Assist with nigiri preparation (preferred but not required)
Maintain strict sanitation, food safety, and health standards at all times
Keep workstation clean, organized, and service-ready
Experience with sushi preparation or Japanese cuisine fundamentals
Ability to perform sashimi slicing and basic fish butchery
Knowledge of proper fish handling and freshness management
Experience making maki rolls
Understanding of basic Japanese cuisine techniques and ingredients
Nigiri-making experience is a plus
Strong attention to cleanliness, sanitation, and food safety
Ability to work efficiently in a fast-paced kitchen environment
Prior sushi bar or Japanese restaurant experience
Knife skills specific to sushi and sashimi
Inventory tracking and prep planning experience
