Job Summary:
Along with assisting in the daily operations in the Back of House, the Key Hourly Manager is specifically responsible for expediting food and running the kitchen throughout the shift.
Responsibilities:
Maintains proper appearance and cleanliness of all areas
Sanitation of the entire kitchen area
Ensure recipe adherence and perfect execution of all food
Learn quality identifiers of all food items.
Ensure walk in is clean, organized and all items are rotated correctly and labeled.
Ensure all logs are filled out correctly and line checks are done according to policy.
Understand basic principals on the aloha POS system.
Understand all systems and equipment in the restaurant including making sure the dishwasher is working correctly and temping above 180 degrees on the final rinse.
Ensure all plates served are made correct and monitor portioning of each item
Ensure plates and trays are clean and ran out to the tables in a timely fashion
Able to demonstrate a thorough understanding of each back of house job position in the restaurant
Hold all employees responsible for performing to Ted’s Café Escondido Restaurants’ standards and discipline accordingly
Work Conditions:
Must be able to work 40+ hours a week
Varied working hours to include weekends, holidays, late evenings, and early mornings as needed
Must be able to stand and/or walk 8+ hours daily
Must be able to lift 25 lbs. frequently, 50 lbs. occasionally, and objects over 50 lbs. rarely
Frequent bending, reaching, grasping, and climbing
Occasional squatting, kneeling, crawling, and fine manipulation
