    Job Description

    Summary
    The Employee Dining Room Sous Chef is responsible for planning and executing fresh healthy meals for our employees. There are 2 meal periods that require fresh food. The EDR Chef is responsible for the timing of quality hot foods and overseeing the attendants to ensure quality of prepared salads and cleanliness of 2 Cafeterias. This position typically works Monday through Friday from 7am to 5pm.

    The budgeted salary range for this position is $65,000-$70,000. Actual pay will be dependent on budget and experience, all of our salaried roles are eligible for bonus.

    Essential Job Functions
    • Prepare a 2 week rotating menu with recipes and order guide
    • Organize and keep all areas clean with labels and dates: walk in cooler, banquet kitchen, Residences at The Little Nell and The Little Nell Cafeterias
    • Liaisons with Banquet Chef and Production Chef for Stock Production, and scheduling equipment usage
    • Liaisons with Banquet Chef and Production Chef for prep time and allocated prep space
    • Assigns cleaning task with EDR cooks and attendants for kitchen cleanliness
    • Organizes Walk ins, stows product in FIFO, labels and dates all food items
    • Prepare themed holiday menus for staff
    • Engages with staff to discuss dining preferences
    • Facilitate Ice Cream every Friday
    • Develop and train staff including externs to standard performance level
    • Assure safe and clean work conditions for all personnel
    • Communicate with the Sous Chef on duty to assure proper service according to his assigned shift
    • Report to work on time in a neatly groomed and acceptable manner as outlined in the employee handbook
    • Be a role model to others
    • Follow all policies and procedures for the Food and Beverage Department, The Little Nell and Aspen One
    • Communicates and reports any mechanical problems with the Engineering Department or Sous Chef
    • Is familiar with Hotel fire, safety and health procedures and assist in emergency and security procedures as directed by management
    • Diligent and economical use of labor, and product
    • Responsible for assisting all team members in organization of kitchen items, to include, dry goods, kitchen equipment, storage containers, cleaning supplies and proper rotation and organization of all food deliveries

  • Qualifications

    Qualifications

    • High School Diploma or equivalent
    • Five years culinary experience
    • Culinary degree or equivalent work expereience

    Supervision Given and Received
    Given: Exercises general supervision over kitchen staff. Assigns a variety of routine tasks, sets general expectations of results expected within company’s policies and procedures. Responsibilities include but are not limited to, interviewing, hiring, planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.
    Received: Works under general supervision of the Executive Sous Chef. Receives continuing or individual assignments according to supervisor’s directions and may perform routine tasks. Expectations of the quality, quantity and deadlines are clearly set. Instructions, advice and assistance available as needed. Work is reviewed on demand or during scheduled check-ins

    Work Environment and Physical Demands
    • Ability to reach, crouch, kneel, smell, taste, stand, walk or be on your feet for extended periods of time
    • Regularly work in wet, hot and humid conditions for extended periods of time and may be required to walk on slippery and uneven surfaces
    • Must be able to frequently lift, push or pull up to 50 lbs. individually or with assistance
