High volume Country Club in Bloomfield Hills seeking an experienced Sous Chef trainee. Competitive pay, compensatory to experience and skills.
Job Responsibilities include, but are not limited to:
Work with Management Team to learn and develop the skills to be an effective leader
Create and maintain a positive work environment
Ensure kitchen staff adhere to set standards, procedures, department rules and sanitation requirements
Pursue acquisition of new talent
Assist in menu development
Keep workstation and kitchen equipment clean, organized and sanitized
Lead trainer for new employees
Be a key partner with the Banquet Chef, Chef de Cuisine, and F+B Management team, demonstrating a united front committed to providing an excellent guest experience

Requirements:
Minimum 1 years of leadership experience
Minimum 5 years BOH experience in a high volume, fine dining restaurant
Working knowledge of Italian cuisine
Basic skills in Microsoft Excel and Word to create spreadsheets and reports
Adaptable interpersonal communication skills to address all employee levels
Proficiency of the English language in reading, writing and verbal communication
Ability to calculate basic math principles to meet proper menu ingredients and perform inventory
Ability to work in a fast-paced environment for extended periods of time to meet high volume business
Ability to lift, balance and carry up to 25 lbs. to transport dry goods inventory, equipment, etc.
Ability to lift, balance and carry (with assistance) up to 100 lbs. to transport dry goods inventory, equipment, etc.
Ability to stand or walk for prolonged periods to cook required menu items
Ability to withstand warm to hot environments for prolonged periods while utilizing ovens, stoves, or fryers
